Meet Heidi Cramer

Heidi Cramer, owner of LunchBox, has enjoyed a long career of feeding Maui’s residents and visitors. First with Makawao Baking Co, then to the surf town of Paia with Cakewalk, and now Maui Cookie Lab (the BEST cookies on Maui, or anywhere for that matter), Heidi’s mission has been the same: to create simple, traditional food, freshly made by hand and from scratch daily. Now that Maui Cookie Lab is well established, Heidi set her sights on creating a simple, yet delicious café specializing in artisan sandwiches, traditional pastry and exceptional coffee. She found the perfect spot in the historic town of Makawao, in Upcountry Maui. Ironically, Heidi’s first bakery, Makawao Baking Co, which she opened in 2000, had been just a block away, so, this new location was a perfect home-coming of sorts. 

The LunchBox is inspired by from what Heidi created at her bakery Cakewalk years ago. Her picnic lunches were a mainstay for locals and visitors who took them on their trek to Hana, or for a family beach day. Even after closing Cakewalk years ago, her local customers still lovingly talk about how much they missed the sandwiches! Heidi wanted to elevate what she started at Cakewalk and the first order of business was to create a house-made bread that was exceptional. After testing, testing and more testing, she settled on her new ciabatta recipe, which is used for all sandwiches. In addition to the amazing ciabatta sandwiches & picnic lunches, LunchBox offers a full espresso bar and house-made pastries. Heidi partners with other local purveyors, from Maui Coffee Roasters for her coffee service, Lapa’au Farms for all produce, as well as offering locally made retail items to enjoy at home.
